I am thankful for the desert
for the burn of the thirst
for without it
I would not know
how much I was watered
now as I am in the ocean’s last tide
I lay ready to return to the earth.
Mandazi Recipe
1. Mix sugar, baking powder, cardamon and cinnamon in a bowl.
2. Beat eggs and milk in a separate bowl.
3. Add butter to flour mixture and mix gently while pouring in egg and milk mixture.
4. Stir with a wooden spoon until dough starts to form.
5. Knead softly on surface with hands until smooth.
6. Transfer back to bowl, covering with a kitchen towel and let rest for 1.5 hours.
7. Fill up a small pot with cooking oil of your choice - heat to 120 degrees. Roll out dough and cut into triangle or square shapes
putting up to 5 in the oil at a time.
8. Once mandazis puff up and float with a golden brown tone they are ready.
300g Flour
3 tsp Baking Powder
4 Tbsp Soft Brown Sugar 1.5 Tbsp Butter/ Margerine 1.5 tsp Crushed cardamon 1 tsp Cinnamon
1 Medium egg
1/2 Cup milk
